Cooking Instructions

  1. 1

    Prepare the Ingredients

Rinse the trout fillets under cold water and pat them dry with paper towels. Trim the ends of the green beans.

  2. 2

    Blanch the Green Beans

Bring a pot of salted water to a boil. Add the green beans and cook for about 3-4 minutes until tender but still crisp. Drain and transfer to a bowl of ice water to stop the cooking process.

  3. 3

    Toast the Almonds

In a dry skillet over medium heat, toast the sliced almonds until golden brown, about 3-5 minutes. Stir frequently to prevent burning. Remove from the skillet and set aside.

  4. 4

    Make Brown Butter

In the same skillet, melt the butter over medium heat. Continue to cook until the butter turns golden brown and has a nutty aroma, about 5-7 minutes. Be careful not to burn it.

  5. 5

    Cook the Trout

In the skillet with brown butter, add the trout fillets skin-side down. Season with salt and pepper. Cook for about 4-5 minutes until the skin is crispy, then carefully flip and cook for another 3-4 minutes until cooked through.

  6. 6

    Combine and Serve

Add the blanched green beans to the skillet to warm them through. Squeeze fresh lemon juice over the trout and green beans. Sprinkle with toasted almonds before serving.
