Preparation and Pickling
Prepare the Vegetables
In a large mixing bowl, combine cauliflower florets, sliced carrots, whole okra, chopped red bell pepper, and chopped celery.
Prepare the Pickling Liquid
In a saucepan, combine olive oil, white vinegar, water, minced garlic, salt, black peppercorns, dried oregano, and crushed red pepper flakes. Bring to a boil over medium heat, stirring to dissolve the salt.
Combine and Pack
Once the pickling liquid comes to a boil, pour it over the mixed vegetables in the bowl. Allow to cool for about 10 minutes.
Transfer to Jars
Using a slotted spoon, transfer the vegetables into sterilized jars, packing them tightly. Pour the remaining pickling liquid over the vegetables, leaving about 1/2 inch of headspace at the top.
Seal and Refrigerate
Seal the jars with lids and refrigerate for at least 24 hours before serving. For best flavor, let them pickle for at least a week.
