Honey Ham Preparation

Prepare the Ham

Preheat the oven to 325°F (165°C). Score the surface of the ham in a diamond pattern and place it in a roasting pan.

Make the Glaze

In a saucepan, combine honey, brown sugar, Dijon mustard, and cloves. Heat over medium heat until the sugar dissolves.

Glaze the Ham

Brush the glaze over the ham, ensuring it seeps into the scored cuts.

Roast the Ham

Cover the ham loosely with foil and roast for about 1 hour. Remove the foil and baste with the glaze every 20 minutes until the internal temperature reaches 140°F (60°C).

Prepare the Salad

In a large bowl, mix together fresh peas, sliced radishes, chopped green onions, and mint leaves.

Make the Dressing

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.

Drizzle the dressing over the salad and toss gently to combine.

Prepare the Potatoes

Preheat the oven to 400°F (200°C). Wash and halve the fingerling potatoes.
