Prepare the Garlic
Peel and thinly slice the garlic cloves. Heat 1 tablespoon of olive oil in a small pan over medium heat. Add the sliced garlic and cook until golden and crispy, about 2-3 minutes. Remove from heat and set aside.

Prepare the Bread
Toast the sourdough bread slices either in a toaster or under a broiler until golden brown and crispy.

Prepare the Tomatoes
While the bread is toasting, slice the heirloom tomatoes into thick slices. Season with salt and pepper to taste.

Assemble the Tartine
Spread a generous layer of goat cheese on each slice of toasted bread. Top with the sliced heirloom tomatoes, a sprinkle of fresh tarragon, and the crispy garlic slices.

Finish and Serve
Drizzle a little more olive oil over the top if desired, and serve immediately.
