Preparing the Steak

    Season the Steak

    Rub the butcher cut steak with olive oil, salt, and black pepper. Let it rest at room temperature for about 30 minutes.

    Cook the Steak

    Preheat a grill or skillet over high heat. Cook the steak for 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

Making the Fries

    Prepare the Potatoes

    Peel and cut the potatoes into thin strips. Rinse and pat dry with a paper towel.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels and season with salt and chopped herbs.

Preparing the Chimichurri

    Mix the Chimichurri

    In a bowl, combine chopped tarragon, minced garlic, red wine vinegar, olive oil, salt, and black pepper. Mix well and let it sit for at least 10 minutes to allow the flavors to meld.
