    Prepare the Fries

    Preheat your oven to 425°F (220°C). Cut the Russet potatoes into thick wedges. In a large bowl, toss the potato wedges with olive oil, rosemary, thyme, salt, and black pepper until evenly coated.

    Bake the Fries

    Spread the seasoned potato wedges in a single layer on a baking sheet. Bake in the preheated oven for about 30-35 minutes, flipping halfway through, until golden brown and crispy.

    Cook the Steak

    While the fries are baking, season the butcher cut steaks with salt and pepper. Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Sear the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steaks from the skillet and let them rest.

    Make Hotel Butter

    In the same skillet, reduce the heat to low. Add the butter and minced garlic, sautéing until the garlic is fragrant. Stir in the chopped parsley and remove from heat.

    Place the steak on a plate alongside the crispy herbed fries. Drizzle the hotel butter over the steak and serve immediately.
