    Roast the Mushrooms

    Preheat your oven to 400°F (200°C). Toss the mixed mushrooms with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for about 15 minutes or until they are golden brown.

    Caramelize the Onions

    While the mushrooms are roasting, slice the onion thinly. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for about 10-15 minutes until the onions are soft and caramelized.

    Prepare the Omelet

    In a bowl, whisk together the eggs with a pinch of salt and black pepper. In a non-stick skillet, add a little olive oil or butter, and heat over medium-low heat. Pour in the egg mixture and cook until the edges begin to set.

    Fill the Omelet

    Once the eggs are mostly set, add the roasted mushrooms, caramelized onions, and Gruyere cheese on one half of the omelet. Fold the other half over the filling.

    Finish Cooking

    Cook for an additional 2-3 minutes until the cheese is melted and the omelet is fully cooked. Slide onto a plate.

    Garnish with fresh parsley if desired and serve hot.
