    Prepare the Potatoes

    Peel and chop the potatoes into quarters. Boil in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.

    Make Potato Puree

    Mash the potatoes with butter and milk until smooth. Season with salt to taste. Keep warm.

    Prepare the Asparagus

    Trim the ends off the asparagus. Blanch in boiling water for 3-4 minutes until tender-crisp. Drain and set aside.

    Cook the Filet Mignon

    Season the filet mignon with salt and black pepper. Heat olive oil in a skillet over high heat. Sear the filet for 4-5 minutes on each side for medium-rare. Remove from skillet and let rest.

    Make the Peppercorn Sauce

    In the same skillet, add the beef broth and crushed peppercorns, scraping up any browned bits. Simmer for about 5 minutes. Add heavy cream, simmer until slightly thickened, about 3-4 minutes. Season with salt to taste.

    On each plate, place a scoop of potato puree, the seared filet mignon, and the asparagus. Drizzle with peppercorn sauce and enjoy.
