Prepare the Bechamel Sauce
In a saucepan, melt 2 tablespoons of butter over medium heat. Add 2 tablespoons of all-purpose flour and whisk for about 1-2 minutes until it forms a roux. Gradually add 1 cup of milk while whisking continuously until the sauce thickens. Season with salt, black pepper, and a pinch of nutmeg. Remove from heat and set aside.

Assemble the Sandwich
Preheat your oven to 375°F (190°C). On a baking sheet, place 2 slices of brioche. Layer each with 2 slices of Bayonne ham and 2 slices of Swiss cheese. Top with the remaining slices of brioche.

Cook the Sandwich
Spread a bit of butter on the top of each sandwich. Bake in the oven for about 10-12 minutes, or until the brioche is golden and the cheese is melted.

Fry the Eggs
While the sandwiches are baking, heat a non-stick skillet over medium heat. Add a little butter and crack the eggs into the skillet. Cook until the whites are set but the yolks are still runny, about 3-4 minutes.

Serve
Once the sandwiches are done baking, remove them from the oven. Pour the prepared bechamel sauce over each sandwich and top with a sunny side up egg. Serve immediately.
