Croque Preparation

    Prepare the Béchamel Sauce

    In a saucepan over medium heat, melt 1 tablespoon of butter. Add 1 tablespoon of flour and whisk together until smooth and bubbly. Gradually add 1 cup of milk, whisking continuously until the sauce thickens. Season with salt, pepper, and a pinch of nutmeg. Remove from heat.

    Assemble the Croque

    Preheat your oven to 375°F (190°C). On one slice of bread, layer 2 slices of Bayonne ham and 2 slices of Swiss cheese. Spread a generous amount of béchamel sauce over the cheese. Top with the second slice of bread.

    Grill the Sandwich

    In a skillet, melt 1 tablespoon of butter over medium heat. Place the assembled sandwich in the skillet and grill until golden brown on both sides, about 3-4 minutes per side. Transfer the sandwich to a baking sheet.

    Bake and Add Egg

    Spoon additional béchamel sauce over the top of the sandwich and sprinkle with remaining Swiss cheese. Bake in the preheated oven for about 10 minutes until the cheese is bubbly and golden. While baking, fry sunny side up eggs in a separate pan.

    Serve

    Once the sandwich is done baking, remove from the oven and top each sandwich with a sunny side up egg. Serve hot with a sprinkle of salt and pepper on top.
