Croque Preparation

Prepare the Béchamel Sauce
In a saucepan over medium heat, melt 1 tablespoon of butter. Add 1 tablespoon of flour and whisk together until smooth and bubbly. Gradually add 1 cup of milk, whisking continuously until the sauce thickens. Season with salt, pepper, and a pinch of nutmeg. Remove from heat.

Assemble the Croque
Preheat your oven to 375°F (190°C). On one slice of bread, layer 2 slices of Bayonne ham and 2 slices of Swiss cheese. Spread a generous amount of béchamel sauce over the cheese. Top with the second slice of bread.

Grill the Sandwich
In a skillet, melt 1 tablespoon of butter over medium heat. Place the assembled sandwich in the skillet and grill until golden brown on both sides, about 3-4 minutes per side. Transfer the sandwich to a baking sheet.

Serve
Once the sandwich is done baking, remove from the oven and top each sandwich with a sunny side up egg. Serve hot with a sprinkle of salt and pepper on top.
