    Caramelize the Onions

    In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 30-40 minutes until they are deeply caramelized and golden brown.

    Add Garlic and Stock

    Stir in the minced garlic and cook for an additional 2 minutes. Pour in the beef stock, and add the thyme, bay leaves, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for about 20-30 minutes.

    Prepare for Gratinee

    Preheat your oven broiler. Remove the bay leaves from the soup and adjust seasoning to taste.

    Serve with Gruyere

    Ladle the soup into oven-safe bowls. Top each bowl with a generous amount of grated Gruyere cheese. Place the bowls on a baking sheet and broil in the oven for 3-5 minutes or until the cheese is bubbly and golden brown.
