Make the Filling
In a bowl, combine ground pork, chopped shrimp, green onions, minced garlic, soy sauce, sesame oil, salt, and pepper. Mix well until fully combined.

Fill the Wrappers
Place a teaspoon of the filling in the center of each wonton wrapper. Moisten the edges with water, fold the wrapper in half diagonally to form a triangle, and press to seal. Bring the two corners together to form a boat shape and seal again.
Prepare the Duck Broth

Make the Broth
In a large pot, add duck bones, water, ginger, whole garlic, and green onions. Bring to a boil, then reduce to a simmer. Cook for about 2 hours, skimming off any foam that rises to the surface.

Season the Broth
After 2 hours, strain the broth to remove solids. Return the broth to the pot, add soy sauce and salt, and bring to a simmer.
Cook the Wontons

Boil the Wontons
In a separate pot, bring water to a boil. Add wontons and cook for about 4-5 minutes, or until they float to the top and are cooked through.
