Prepare the Filling
In a large bowl, combine the chopped shiitake mushrooms, minced garlic, chopped celery, corn kernels, and chopped chives. Season with salt and black pepper. Mix well until all ingredients are evenly distributed.
Fill the Dumplings
Take a gluten-free dumpling wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with a little water, fold it over to create a half-moon shape, and pinch the edges to seal tightly. Repeat with remaining wrappers and filling.
Pan-Fry the Dumplings
Heat a non-stick skillet over medium heat and add a tablespoon of oil. Once hot, place the dumplings in the skillet, making sure not to overcrowd. Fry for about 3-4 minutes or until the bottom is golden brown. Add a splash of water to the skillet, cover, and steam for 5 minutes. Remove the lid and let the dumplings fry for another 2 minutes to crisp up the bottom.
Serve
Transfer the dumplings to a serving platter and serve hot, with dipping sauce of your choice.
