    Preparing the Duck

    Score the skin of the duck breast in a criss-cross pattern, being careful not to cut into the meat. Season both sides of the duck breast with salt and pepper.

    Searing the Duck

    Place the duck breast skin-side down in a cold skillet. Turn the heat to medium and cook until the fat renders and the skin is crispy, about 6-8 minutes. Flip and cook for an additional 3-4 minutes until the duck is medium-rare. Remove from the pan and let rest for 5 minutes before slicing.

    While the duck rests, steam the buns according to package instructions until hot and fluffy.

    Spread a tablespoon of hoisin sauce inside each steam bun. Add slices of seared duck and top with thinly sliced spring onions.
