1. Prepare the Bok Choy
In a pot of boiling water, blanch the bok choy for about 2-3 minutes until tender. Remove and set aside.
2. Cook the Shrimp
In a large wok or skillet, heat the olive oil over medium-high heat. Add the minced garlic and diced jalapeno, sauté for about 1 minute until fragrant.
3. Add Shrimp
Add the jumbo shrimp to the wok, season with salt and black pepper, and stir-fry for 3-4 minutes until the shrimp are pink and opaque.
4. Finish with Sauce
Pour in the soy sauce and sesame oil, tossing well to coat the shrimp evenly. Cook for another minute.
5. Serve
Serve the spicy shrimp over a bed of rice, accompanied by the steamed bok choy. Garnish with sliced green onions.
