    Prepare the Filling

    In a large skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant. Add the shredded cabbage and cook for about 5 minutes until softened. Stir in the pastrami, soy sauce, green onions, salt, and pepper. Cook for another 2 minutes until heated through. Remove from heat and let cool.

    Assemble the Eggrolls

    Lay an eggroll wrapper on a clean surface with one corner pointing towards you. Place 2-3 tablespoons of the filling near the corner closest to you. Fold the corner over the filling, then fold in the sides and roll tightly. Seal the edge with a little water. Repeat for all wrappers.

    Fry the Eggrolls

    In a deep skillet or pot, heat vegetable oil to 350°F (175°C). Fry the eggrolls in batches, turning occasionally, until golden brown and crispy, about 3-4 minutes each. Drain on paper towels.

    Cut each eggroll in half and serve hot, optionally with a dipping sauce of your choice.
