Pasta Preparation

Cook the Spaghetti
In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.

Cook the Bacon
In a large skillet over medium heat, add the diced bacon or pancetta. Cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Prepare the Sauce Mixture
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and freshly ground black pepper until well combined.

Combine Spaghetti with Sauce
Add the drained spaghetti to the skillet with the bacon (ensure the skillet is off the heat). Quickly pour the egg and cheese mixture over the spaghetti. Toss vigorously to combine, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

Season and Serve
Taste and season with salt and additional black pepper as needed. Serve immediately, garnished with extra Parmesan cheese if desired.
