Preparing the Wings

Prepare the Chicken Wings
Rinse the chicken wings under cold water and pat them dry with paper towels.

Season the Wings
In a large bowl, mix the olive oil, salt, black pepper, garlic powder, and smoked paprika. Add the chicken wings and toss until they are evenly coated with the seasoning.
Smoking the Wings

Preheat the Smoker
Preheat your smoker to 225°F (107°C). Use your choice of wood chips for smoking, such as hickory or applewood.

Smoke the Wings
Place the seasoned chicken wings on the smoker grates in a single layer. Close the lid and smoke for about 1.5 hours or until they reach an internal temperature of 165°F (74°C).

Arrange the sauced wings on a platter. Serve with celery sticks and a choice of Ranch or Bleu Cheese dressing on the side.
