Macaroni and Cheese Base

Method

Prepare the Macaroni

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Make the Cheese Sauce

In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute, stirring constantly to create a roux.

  3. 3

    Add Milk and Cheese

Gradually whisk in the milk, ensuring there are no lumps. Continue cooking until the mixture thickens, about 3-5 minutes. Reduce heat to low and stir in the cheddar cheese and cream cheese until melted and smooth.

  4. 4

    Combine Pasta and Sauce

Add the drained macaroni to the cheese sauce, stirring to combine. Season with salt and black pepper to taste.

Prepare the Toppings

  1. 5

    Prep Bacon and Veggies

Cook the bacon until crispy, then chop it into small pieces. Slice the green onions and jalapeños.

  2. 6

    Prepare Breadcrumbs

If using plain breadcrumbs, toast them lightly in a pan with a little bit of butter to add flavor and crunch.

Assemble the Mac n Cheese Bar

  1. 7

    Set Up the Bar

In a large serving bowl, pour the macaroni and cheese. Arrange the assorted toppings in separate bowls around the macaroni for guests to customize their servings.

  2. 8

    Serve

Encourage guests to create their own mac n cheese bowls by adding their choice of toppings, such as bacon, green onions, jalapeños, bread crumbs, and cheese, along with sauces like sriracha or hot sauce.
