Preparing the Gyro Meat

    Mix the Meat

    In a large mixing bowl, combine the ground lamb and ground beef. Add the finely chopped onion, minced garlic, ground cumin, ground coriander, dried oregano, salt, and black pepper. Mix until well combined.

    Form the Meat

    Shape the meat mixture into oval patties or logs, about 1/2 inch thick. Place them on a baking sheet lined with parchment paper.

    Cook the Meat

    Preheat your grill or a skillet over medium-high heat. Brush the patties with olive oil and cook for 4-5 minutes on each side, or until they are nicely browned and cooked through.

Preparing the Tzatziki Sauce

    Combine Ingredients

    In a bowl, mix together the Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, salt, and black pepper. Stir until well combined.

    Chill

    Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.

Assembling the Gyro

    Warm the Pita

    Warm the pita bread in a dry skillet or wrap in foil and place in a preheated oven for a few minutes.

    Assemble the Gyro

    Place a cooked meat patty in the center of each warm pita. Top with slices of tomato, red onion, and a generous spoonful of tzatziki sauce.

    Serve

    Fold the pita over the filling, and serve immediately while warm.
