Preparing the Beef

Sear the Beef
In a large skillet over medium-high heat, add a bit of oil and sear the beef chuck roast on all sides until browned (about 3-4 minutes per side). Remove and set aside.

Combine Ingredients in Slow Cooker
Transfer the seared beef, sautéed onions, minced garlic, beef broth, thyme, bay leaves, salt, and black pepper into a slow cooker.

Cover and cook on low for 8 hours or until the beef is fork-tender.
Assembling the Sandwiches

Prepare the Rolls
Once the beef is cooked, preheat your oven to 350°F (175°C).

Place a generous amount of shredded beef onto the bottom half of each roll. Top with a slice of provolone cheese.
