Preparing the Shrimp

Season the Shrimp
In a large bowl, combine the peeled and deveined shrimp with salt, black pepper, and garlic powder. Toss to coat the shrimp evenly with the seasonings.

Prepare the Breading
In a shallow bowl, add cornstarch. In another bowl, beat the egg. In a third bowl, add panko breadcrumbs. Set up a breading station with these three bowls.

Bread the Shrimp
Dredge each seasoned shrimp in cornstarch, shaking off the excess. Dip it into the beaten egg, and then coat it with panko breadcrumbs. Place the breaded shrimp on a plate and repeat with the remaining shrimp.
Frying the Shrimp

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the oil is hot enough.

Making the Boom-Boom Sauce

Combine Sauce Ingredients
In a mixing bowl, combine mayonnaise, sweet chili sauce, sriracha sauce, lemon juice, garlic powder, and salt to taste. Whisk until smooth and well combined.
Serving

Toss Shrimp in Sauce
In a large bowl, add the fried shrimp and the Boom-Boom sauce. Gently toss until all the shrimp are well coated in the sauce.

Serve the Dynamite Shrimp immediately, garnished with green onions or sesame seeds if desired.
