Gather all the ingredients and prepare the chicken breasts by patting them dry with paper towels. Season both sides with salt, black pepper, and garlic powder.

Slice the Mushrooms
Clean the mushrooms with a damp cloth and slice them thinly.

Sear the Chicken
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear for about 5-7 minutes on each side or until golden brown. Remove the chicken from the skillet and set aside.

Add 1 cup of champagne and 3 tablespoons of Dijon mustard to the skillet with the mushrooms, scraping up any brown bits from the bottom. Bring to a simmer and let the sauce cook for about 5 minutes.

Return the seared chicken breasts to the skillet, nestling them into the sauce. Reduce heat to low, cover, and let simmer for an additional 10-15 minutes until chicken is cooked through and the sauce thickens slightly.
