Method
Preparing the Topping
- 1
Dice the Tomatoes
Wash the tomatoes thoroughly. Remove the stems and dice them into small pieces. Place the diced tomatoes in a mixing bowl.
- 2
Chop the Basil
Wash the basil leaves and pat them dry. Stack the leaves, roll them tightly, and slice them into thin ribbons (chiffonade). Add the basil to the bowl with the tomatoes.
- 3
Add Garlic and Seasoning
Mince the garlic cloves and add them to the tomato and basil mixture. Drizzle in the olive oil, and season with salt and black pepper. Toss everything gently to combine. Let the mixture sit for at least 10 minutes to allow the flavors to meld.
Grilling the Bread
- 4
Prepare the Bread
Slice the French baguette into 1/2 inch thick slices on the diagonal. You should get about 12 slices.
- 5
Grill the Bread
Preheat a grill or grill pan over medium heat. Place the slices of bread on the grill and toast for about 2-3 minutes on each side, or until they are golden brown and have grill marks.
Assembling the Bruschetta
- 6
Top the Grilled Bread
Once the bread is grilled, remove it from heat. Spoon the tomato and basil mixture generously onto each slice of grilled bread.
- 7
Serve
Arrange the bruschetta on a serving platter. Drizzle with a bit more olive oil if desired, and serve immediately.
