Preparation Steps

Prepare the Yuca
Peel the yuca and cut it into chunks. Boil in salted water until tender, about 20-25 minutes. Drain and let it cool slightly.

Mash the Yuca
Once the yuca is cool enough to handle, mash it in a large bowl until smooth. Set aside.

Mix Ingredients
In the bowl with the mashed yuca, add the shredded chicken, cheddar cheese, chopped red bell pepper, chopped onion, eggs, salt, and black pepper. Mix well until all ingredients are combined.

Shape the Croquettes
Take a portion of the mixture and shape it into small logs or patties. Repeat until all the mixture is used.

Coat with Breadcrumbs
Roll each croquette in bread crumbs until fully coated.

Fry the Croquettes
In a large skillet, heat oil over medium heat. Once hot, carefully add the croquettes in batches. Fry until golden brown on all sides, about 3-5 minutes per side.

Drain and Serve
Remove the croquettes from the oil and place them on paper towels to drain excess oil. Serve hot with pico de gallo on the side.
