Prepare the Filling
Boil the potatoes until soft, peel, and mash them. In a pan, heat a tablespoon of oil and add cumin seeds. Once they splutter, add finely chopped onion and sauté until golden brown. Add the mashed potatoes, green peas, coriander powder, garam masala, turmeric powder, and salt. Mix well and cook for a few minutes. Stir in chopped cilantro and set aside to cool.

Make the Dough
In a bowl, combine 2 cups of all-purpose flour with 1/2 tsp of salt. Add 1/4 cup of oil and mix until crumbly. Gradually add water to form a smooth dough. Cover with a damp cloth and let it rest for 30 minutes.

Shape the Samosas
Divide the dough into equal-sized balls. Roll each ball into a thin oval. Cut it in half to form two semi-circles. Take one semi-circle, form a cone by folding and sealing the edges. Fill the cone with the potato-pea mixture and seal the open edge by pressing it well.

Fry the Samosas
Heat oil in a deep frying pan. Once hot, carefully add the samosas in batches. Fry until golden brown and crisp. Remove and drain on paper towels.
