    Prepare the Chicken

    Grill the rotisserie chicken over wood charcoal until cooked through and skin is crispy. Let it rest, then carve into pieces.

    Cook the Pasta

    In a large pot, boil salted water and cook the Peruvian pasta according to package instructions. Drain and set aside.

    Sauté the Vegetables

    In a large pan or wok, heat olive oil over medium-high heat. Add minced garlic and ginger, sauté for 1 minute until fragrant. Add the shredded cabbage, green beans, and sliced bell peppers. Stir-fry for about 5-7 minutes until vegetables are tender-crisp.

    Combine Ingredients

    Add the cooked pasta to the pan with vegetables. Drizzle soy sauce, and season with salt and black pepper to taste. Toss everything together until well mixed and heated through.

    Serve

    Plate the tallarines saltado, top with pieces of grilled chicken, and serve with your choice of steak fries or house salad, and rice or black beans & rice. Garnish with bean sprouts and diced tomatoes.
