Make the Filling
Boil and mash the potatoes. Heat oil in a pan, add cumin seeds, and let them splutter. Add chopped onions and sauté until golden brown. Stir in ginger-garlic paste, green peas, and the mashed potatoes. Add coriander powder, garam masala, green chili, and salt. Mix well and cook for a few more minutes. Allow it to cool.

Prepare the Dough
In a bowl, mix 2 cups of all-purpose flour with a pinch of salt and enough water to form a smooth dough. Cover with a damp cloth and let it rest for 30 minutes.

Assemble the Samosas
Divide the dough into small balls. Roll each ball into a thin oval. Cut it in half to form two semicircles. Form a cone by folding one semicircle and seal the edge with water. Stuff the cone with the filling and seal the open edge using water.

Fry the Samosas
Heat oil in a deep frying pan. Once hot, carefully add the samosas and fry until golden brown and crispy. Remove and drain on paper towels.
