Prepare the Noodles
Soak the rice noodles in warm water for about 30 minutes or until soft. Drain and set aside.

Cook the Shrimp
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add shrimp and cook until pink and opaque, about 3-4 minutes. Remove from the skillet and set aside.

Scramble the Eggs
In the same skillet, add another tablespoon of oil. Crack the eggs into the skillet and scramble until fully cooked. Remove and set aside.

Stir-Fry the Ingredients
Add the remaining tablespoon of oil to the skillet. Add minced garlic and cook for about 30 seconds until fragrant. Add the soaked noodles, cooked shrimp, scrambled eggs, soy sauce, fish sauce, lime juice, and brown sugar. Toss everything together and cook for another 2-3 minutes.

Add the Finishing Touches
Add bean sprouts, green onions, and crushed peanuts to the skillet. Toss well for 1-2 minutes. Season with red chili flakes to taste.

Serve the Pad Thai hot, garnished with extra crushed peanuts and lime wedges if desired.
