    Prepare the Ingredients

    Start by chopping the filet mignonette into strips, slicing the onions, dicing the tomatoes, and cutting the potatoes into fries. Rinse the rice under cold water until the water runs clear.

    Cook the Potatoes

    In a pot of boiling salted water, cook the potato fries until they are tender but not mushy, about 5-7 minutes. Drain and set aside.

    Prepare the Rice

    In a separate pot, cook the white rice according to package instructions. Once cooked, fluff with a fork and keep warm.

    Sear the Beef

    In a large skillet, heat olive oil over medium-high heat. Add the strips of filet mignonette and season with salt and pepper. Sear for about 2-3 minutes until browned, then remove and set aside.

    Cook the Vegetables

    In the same skillet, add the sliced onions and cook until translucent. Add the minced garlic and cook for an additional minute, then add the diced tomatoes.

    Combine and Finish

    Return the seared beef to the skillet, add soy sauce and vinegar, and stir to combine. Cook for another 2-3 minutes until everything is heated through.

    Serve the lomo saltado hot, topped with fresh cilantro, alongside the potatoes and rice.
