    Prepare the Filling

    In a skillet over medium heat, add a splash of oil. Sauté the chopped onion and bell pepper until translucent. Add the minced garlic and cook for an additional minute.

    Cook the Meat

    Add the ground chicken or beef to the skillet. Cook until browned, breaking it apart with a spatula. Stir in cumin, paprika, salt, and pepper. Mix well and cook for another 5 minutes.

    Add Herbs

    Remove the skillet from heat and stir in the chopped cilantro. Allow the mixture to cool slightly.

    Prepare the Pastry

    Roll out the pastry dough on a floured surface to about 1/8-inch thick. Cut into circles (about 4-6 inches in diameter).

    Fill the Pastry

    Place a spoonful of the meat filling in the center of each pastry circle. Fold the dough over to create a half-moon shape and press the edges to seal.

    Bake

    Preheat the oven to 375°F (190°C). Place the filled pastries on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.

    Serve

    Let the emburs cool slightly before serving with pico de gallo on the side.
