    Prepare the Crust

    Preheat your oven to 175°C (350°F). In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let it cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue mixing until well combined. Add the sour cream, eggs (one at a time), vanilla extract, and lemon juice. Mix until the mixture is smooth and creamy.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

    Chill and Serve

    After cooling, refrigerate the cheesecake for at least 4 hours, or overnight for best results. Once chilled, run a knife around the edge of the pan before removing the sides of the springform pan. Slice and serve with your favorite toppings.
