    Prepare the Rice

    In a medium pot, bring 2 cups of water to a boil. Add the white rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 18 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    Cook the Vegetables

    In a large skillet, add a splash of olive oil over medium heat. Add the shredded cabbage, green beans, bell peppers, and zucchini. Sauté for about 5-7 minutes until the vegetables are tender. Stir in the fresh spinach and cook until wilted. Remove from heat and set aside.

    Prepare the Barramundi and Shrimp

    In the same skillet, add a bit more olive oil if necessary. Season the barramundi fillets with salt and pepper. Cook the fillets for about 4-5 minutes on each side or until they are cooked through and flaky. Add the shrimp to the skillet and cook for an additional 3-4 minutes until they are pink and opaque.

    Add Tomato Sauce

    Pour the tomato sauce over the cooked fish and shrimp mixture. Let it simmer for 2-3 minutes to heat through.

    To serve, place a scoop of rice on each plate, top with the vegetable mixture, and then the barramundi and shrimp with tomato sauce. Enjoy your meal!
