Cooking Instructions
- 1
Cook the Rice
Rinse the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rice and 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender. Remove from heat and let it stand for 5 minutes. Fluff with a fork.
- 2
Prepare the Vegetables
While the rice is cooking, chop the green beans, cabbage, bell peppers, and zucchini into bite-sized pieces.
- 3
Scramble the Eggs
In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Beat the eggs and pour them into the skillet. Scramble until fully cooked, then remove from the skillet and set aside.
- 4
Stir-fry the Vegetables
In the same skillet, add another tablespoon of olive oil. Add the chopped green beans, cabbage, bell peppers, and zucchini. Stir-fry for about 5-7 minutes until they are tender-crisp.
- 5
Combine Ingredients
Add the cooked rice to the skillet with the vegetables. Stir in the bean sprouts, scrambled eggs, soy sauce, green sauce, salt, and pepper. Mix well and cook for another 2-3 minutes to heat through.
- 6
Serve
Remove from heat and serve hot. Enjoy your Arroz Chaufa!
