Preparation Steps

  1. 1

    Prepare the Steak

In a small bowl, mix the ancho chili powder, salt, and black pepper. Rub the mixture all over the teres major steak. Drizzle with olive oil and let it marinate for at least 30 minutes.

  2. 2

    Make the Jalapeno Crema

Blend the sour cream and chopped jalapeno in a blender until smooth. Refrigerate until ready to use.

  3. 3

    Prepare the Garlic Mashed Potatoes

Peel and chop the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot. Add minced garlic, butter, and mash until smooth. Season with salt to taste.

  4. 4

    Grill the Vegetables

Toss mixed vegetables with olive oil, salt, and pepper. Grill or sauté until tender.

  5. 5

    Grill the Steak

Preheat the grill to medium-high heat. Grill the teres major steak for 5-7 minutes per side, or until it reaches your desired doneness. Allow to rest for 5 minutes before slicing.

  6. 6

    Serve

Slice the steak and serve it topped with jalapeno crema alongside garlic mashed potatoes and grilled vegetables.
