    Prepare the Potatoes

    Peel and grate the russet potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.

    Season the Mixture

    In a large bowl, combine the grated potatoes with salt, black pepper, and all-purpose flour. Mix well until the potatoes are evenly coated.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Using a spoon or your hands, form small patties from the potato mixture and gently place them in the hot oil. Fry in batches, making sure not to overcrowd the pan, for about 3-4 minutes on each side or until golden brown and crispy.

    Drain and Serve

    Remove the fried pommes paillasson from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with roasted garlic aioli and Ely's steak sauce for dipping.
