Steak and Accompaniments

Method

Preparation and Cooking

  1. 1

    Prepare the Steak

Preheat the grill to medium-high heat. Season the teres major steak with salt and pepper on both sides. Grill the steak for about 4-5 minutes on each side for medium-rare doneness. Use a meat thermometer to ensure the internal temperature reaches 135°F (57°C). Once cooked, remove from grill and let it rest for 5 minutes.

  2. 2

    Make the Pommes Paillasson

Grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture. In a mixing bowl, combine the grated potatoes with flour, salt, and pepper. Heat vegetable oil in a skillet over medium heat. Shape the potato mixture into small patties and fry until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

  3. 3

    Serve the Dish

Slice the rested steak against the grain. Place the steak on a plate, drizzle with Ely's steak sauce, and serve alongside the crispy pommes paillasson.
