    Prepare the Slaw

    In a large bowl, combine the shredded cabbage, shredded carrot, mayonnaise, apple cider vinegar, and sugar. Mix well until all ingredients are combined. Refrigerate for at least 30 minutes.

    Make the Beer Batter

    In a mixing bowl, whisk together the flour, baking powder, salt, and pepper. Gradually add the beer, stirring until the batter is smooth and well combined.

    Prepare the Fries

    Peel and cut the potatoes into thick fries. Rinse them under cold water and pat dry with a towel.

    Fry the Potatoes

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown, about 4-5 minutes. Remove and drain on paper towels. Season with salt.

    Fry the Walleye

    Dip each walleye fillet into the beer batter, allowing excess to drip off. Carefully place the battered fillets in the hot oil and fry until golden brown, about 4-6 minutes. Remove and drain on paper towels.

    Serve the beer-battered walleye with the hand-cut fries, chilled coleslaw, and tartar sauce on the side.
