Cooking Instructions

  1. 1

    Prepare the Coffee Rub

In a small bowl, mix the ground coffee, salt, and black pepper.

  2. 2

    Wrap the Filet

Wrap each filet mignon with a slice of Benton’s bacon and secure with toothpicks if necessary.

  3. 3

    Apply the Rub

Rub the coffee mixture generously over the bacon-wrapped filets.

  4. 4

    Preheat the Grill

Preheat your grill to medium-high heat.

  5. 5

    Grill the Filets

Place the filets on the grill and cook for about 4-5 minutes on each side for medium-rare, adjusting the time for your preferred doneness.

  6. 6

    Make the Cherry Glaze

In a saucepan, combine red wine and cherries over medium heat. Let it simmer until reduced and slightly thickened, about 10-15 minutes.

  7. 7

    Roast the Potatoes

Toss the rosemary potatoes with olive oil, salt, and black pepper. Roast in the oven at 400°F (200°C) for 25-30 minutes or until golden and tender.

  8. 8

    Sauté the Vegetables

In a skillet, sauté mixed vegetables in olive oil over medium heat until tender, about 5-7 minutes.

  9. 9

    Serve

Plate the grilled filet mignon with roasted rosemary potatoes and sautéed vegetables, drizzling the cherry glaze over the steak.
