Prepare the Plantains
Peel the green plantains and cut them into 1-inch thick slices.

First Fry
In a large skillet, heat vegetable oil over medium heat. Add the sliced plantains and fry for about 3-4 minutes on each side until they are golden but not fully cooked. Remove from oil and drain on paper towels.

Smash the Plantains
Using the bottom of a flat dish or a tostonera, gently smash each fried plantain slice to about 1/2 inch thickness.

Second Fry
Return the smashed plantains to the hot oil and fry for an additional 2-3 minutes per side until they are crispy and golden brown. Remove and drain on paper towels. Sprinkle with salt while hot.
