Method

Preparation Steps

  1. 1

    Prepare the Masa

In a large mixing bowl, combine the masa harina, vegetable broth, salt, and spices. Mix until a smooth dough forms.

  2. 2

    Prepare the Filling

In another bowl, mix the shredded meat, sweet peas, and diced carrots. Season with salt, black pepper, and cumin to taste.

  3. 3

    Assemble the Tamalitos

Cut the banana leaves into rectangular pieces (about 12x10 inches). Place a scoop of masa in the center of each piece, flatten it slightly, and add a portion of the filling on top. Fold the sides of the banana leaf over the masa and filling, then roll it up tightly.

  4. 4

    Steam the Tamalitos

Place the tamalitos upright in a steamer basket lined with banana leaves. Steam over boiling water for about 1 to 1.5 hours until the masa is firm.

  5. 5

    Serve

Remove the tamalitos from the steamer and let them cool slightly. Serve warm with lime wedges and pickled onions on the side.
