Pupusa Preparation

    Prepare the Dough

    In a mixing bowl, combine the masa harina, salt, and water. Mix until a soft dough forms. Let it rest for about 10 minutes.

    Prepare the Fillings

    In separate bowls, have your chosen fillings ready: cheese, chicharron, beans, or a combination.

    Form the Pupusas

    Divide the dough into 8 equal portions. Flatten each portion into a small disc about 1/4 inch thick. Place a tablespoon of your chosen filling in the center, fold the dough over the filling, and pinch to seal. Gently flatten the filled dough to form a thicker disc.

    Cook the Pupusas

    Heat a skillet or griddle over medium heat and add a little oil. Cook each pupusa for about 3-4 minutes on each side or until golden brown and slightly crispy. Repeat with remaining pupusas.

    Serve

    Serve the pupusas warm with curtido (pickled cabbage) and salsa on the side.
