Preparing the Beans and Plantains

Sauté the Beans

In a pot, add the black beans with salt and enough water to cover. Simmer for 20 minutes until heated through. Drain and set aside.

Fry the Plantains

Peel and slice the plantains diagonally. Heat oil in a skillet over medium heat, add plantain slices and sauté until golden and tender, about 3-4 minutes on each side. Set aside.

Making Huevos con Salchicha

Cook the Chorizo

In a pan, heat oil over medium heat. Add diced onion and bell pepper, sauté until soft. Add chorizo and cook until browned.

Scramble the Eggs

Crack in the eggs and scramble them with the chorizo mixture until cooked through. Remove from heat.

Making Corn Tortillas

Prepare the Dough

In a bowl, mix masa harina, water, and salt until a smooth dough forms. Divide into small balls.

Cook the Tortillas

Press each ball into a flat tortilla using a tortilla press or rolling pin. Cook each tortilla on a hot skillet for about 1 minute per side, until lightly browned.

Assembling the Dish

Plate the Dish

On a plate, serve a portion of sautéed beans, fried plantains, and huevos con salchicha. Top with crema, queso fresco, sliced avocado, and chopped cilantro. Serve warm with corn tortillas.
