Prepare Pickled Onions

Pickle the Onions

In a bowl, combine the sliced red onion, vinegar, sugar, and salt. Mix well and let sit for at least 30 minutes to pickle.

Cook Beans

Sauté the Beans

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add whole beans, season with salt and pepper, and cook until heated through, about 5-7 minutes.

Make Pico de Gallo

Prepare Pico de Gallo

In a bowl, combine diced tomato, onion, jalapeño, lime juice, and salt. Mix well and let it sit for 10 minutes for flavors to meld.

Assemble Salad

Combine Ingredients

In a large bowl, layer the spring mix, sautéed beans, pico de gallo, crumbled Honduran cheese, sliced avocado, radish, chopped cilantro, and pickled onions.

Add Tortilla Strips and Dressing

Top with fried tortilla strips and drizzle with Honduran ranch and red sauce before serving.
