Prepare the Chicken Broth
In a large pot, place the whole chicken and add 10 cups of water. Bring to a boil over medium-high heat. Reduce heat to low and simmer for about 30 minutes, skimming off any foam that rises to the surface.

Shred the Chicken
Remove the chicken from the pot and let it cool slightly. Shred the meat from the bones and return it to the soup. Discard the bones and skin.

Finish the Soup
Add the corn and chopped cilantro to the soup. Taste and adjust seasoning with more salt or pepper if needed. Simmer for an additional 10 minutes.

Prepare the Rice and Tortillas
While the soup is simmering, cook the white rice according to package instructions. Warm the corn tortillas on a skillet or in the microwave.
