Prepare the Chicken
Season the chicken pieces with salt, pepper, and your choice of spices. Let them marinate for at least 30 minutes.

Fry the Chicken
Heat oil in a deep frying pan to 350°F (175°C). Fry the marinated chicken pieces for about 15-20 minutes, or until golden brown and cooked through. Remove and let drain on paper towels.

Prepare Plantain Chips
If using raw plantains, slice them thinly and fry them in hot oil until crispy. If using store-bought plantain chips, simply prepare them as directed on the package.

Assemble the Dish
On a serving platter, lay out the plantain chips. Place the fried chicken on top of the chips. Add pickled onions, micro radish, drizzle with red sauce, and finish with aderezo.

Serve immediately while hot and enjoy your Pollo Chuco!
