Prepare Ingredients
Gather and prepare all ingredients. If using cooked chicken, shred it into small pieces. Dice the bell peppers.

Assemble Quesadilla
On a flat surface, lay one tortilla. Sprinkle half of the shredded cheese evenly over the tortilla. Add a layer of shredded chicken (if using) and diced bell peppers. Top with the remaining cheese and place another tortilla on top.

Cook Quesadilla
Heat a skillet over medium heat and add 1 tablespoon of olive oil or butter. Carefully place the assembled quesadilla in the skillet and cook for about 3-4 minutes or until the bottom tortilla is golden brown. Flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese is melted.

Remove the quesadilla from the skillet and let it cool for a minute. Cut it into wedges and serve with sour cream and salsa on the side.
