Prepare the Tortillas
Cut the corn tortillas into quarters. Heat the vegetable oil in a large skillet over medium heat. Fry the tortilla pieces until they are golden and crispy, about 2-3 minutes. Remove and drain on paper towels.

Make the Base
In the same skillet, add the refried beans and warm them through. Season with salt to taste. Once heated, layer the crispy tortillas over the beans.

Add Toppings
Pour the chipotle red sauce over the tortillas and beans, then sprinkle the queso fresco on top. Allow it to melt slightly.

Assemble the Chilaquiles
Once the cheese has melted, remove the skillet from heat. Top the dish with pico de gallo, fresh cilantro, and the fried eggs. Add the choice of meat or veggie option on the side.

Serve the chilaquiles hot, garnished with additional cilantro if desired.
