Marinate the Chicken
In a large bowl, combine the buttermilk, salt, and a pinch of black pepper. Submerge the chicken pieces in the buttermilk mixture and cover. Refrigerate for at least 4 hours or overnight for best results.

Prepare the Coating
In another bowl, mix the all-purpose flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper together until well combined.

Coat the Chicken
Remove the chicken pieces from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring they are fully coated. Shake off the excess flour.

Fry the Chicken
Carefully place the coated chicken pieces into the hot oil, being careful not to overcrowd the pan. Fry until golden brown and cooked through, about 12-15 minutes per side. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

Drain and Serve
Remove the fried chicken from the oil and place on a wire rack or paper towels to drain excess oil. Let it rest for a few minutes before serving.
