    Prepare the Shrimp

    In a medium bowl, combine the shrimp, jalapeño, red bell pepper, onion, garlic, chili powder, cumin, salt, and black pepper. Mix well and set aside to marinate for about 10 minutes.

    Cook the Shrimp

    Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the marinated shrimp mixture and cook for about 5-7 minutes, or until the shrimp are pink and cooked through. Remove from the skillet and set aside.

    Make the Omelette

    In a bowl, whisk together the eggs. In the same skillet, add the remaining tablespoon of olive oil and heat over medium heat. Pour in the eggs and cook until the edges start to set.

    Add Filling

    Once the edges are set, add the cooked shrimp mixture to one half of the omelette. Allow it to cook for another 2-3 minutes until the eggs are fully set.

    Fold and Serve

    Carefully fold the omelette in half over the shrimp mixture. Slide it onto a plate and garnish with fresh cilantro. Serve hot.
